Cauliflower Fried Rice
I've had a lot of people ask me for my cauliflower fried rice recipe so I want to share it with all of you! This is one of my favorite go to recipes I found that satisfies any rice craving I may be having. If you haven't eaten cauliflower or cooked with it before BEWARE it smells like straight up butt! but don't worry it doesn't taste the way it smells. I apologize I don't have any great pictures to share of me making it besides the pictures I took on my phone because I didn't think anything of it until everyone started asking for the recipe. This recipe can also trick any picky anti veggie eater into eating all veggies :)
So when I was meal prepping I doubled this recipe which provided enough for both Dillon and I until Thursday and depending on how much your serving is you may want to triple it. I would say the serving size we had was like a cup of "fried rice" per lunch. First you want to saute your onions and garlic in olive oil and I am a lover of garlic so I add it to EVERYTHING and when a recipe calls for garlic I always put more than what it calls for. While that is sauteing you can prepare your cauliflower. When meal prepping, Costco becomes a store you frequent. I bought a bag of cauliflower florets at Costco and because I doubled my recipe I rinsed the cauliflower then grated the whole bag in my food processor.
When your onions are transparent and you have a nice garlic aroma go ahead and throw your veggies in to start cooking. I am all about convenience especially when it comes to food prep so I like using just the frozen bag of peas and carrots you get from the store. If you have fresh veggies you can add that too, even better! You can add in any other veggies you would like. Next I add my eggs and instead of scrambling them separately and adding them in I push everything in the pan to the sides and make a little hole and crack my eggs in there and then mix it into everything else. Once your eggs are cooked throw in the cauliflower, soy sauce and oyster sauce. I like to also add a little pepper to taste and to be honest, I need to get better at writing down the exact amounts of things I put into my cooking because I just keep adding things until I get it to the taste I like. So feel free to keep adding more oyster sauce or soy sauce if you want stronger flavor or just add a little and continue to add them in until you get it just how you like it.
In case any of you don't know what oyster sauce is this is what I use, you can find it at an oriental market and I want to say you can also find it at just your local grocery store like walmart....I think I got mine from the oriental market. Don't be fooled by the name though because it doesn't taste fishy or like oysters but it adds a nice flavor to your fried rice. Once you have all of that added in just give it all a good stir and cook it for a few minutes until everything is heated up and cooked through. You may notice some liquid at the bottom of your pan and that's okay just dump it out if it bothers you or be sure to drain it when serving. You get some extra liquid because cauliflower and veggies in general tend to hold a lot of moisture and cauliflower isn't like rice where it totally just absorbs the liquid it's being cooked in.
Aaaaannnnd that's it! super easy! I hope you guys enjoy :) feel free to add any other veggies you may love or also any proteins like tofu or chicken etc. You need to try this with the Kung Pao chicken I made along with it, its sooo goood together! Cauliflower Fried Rice
Ingredients:
3 cups of grated raw cauliflower (I use a food processor but you can also use a cheese grater)
1/2 cup frozen peas
1/2 cup carrots, thinly sliced
3-4 garlic cloves, minced
1/2 cup onion, diced
1/2 TBSP olive oil
2 eggs (or 4 egg whites) scrambled
3 TBSP soy sauce
3 TBSP Oyster Sauce
pepper to taste
In a large pan, saute garlic and onions in olive oil on a medium/high heat until onions become soft and transparent.
Next add in peas and carrots and cook until carrots begin to soften and peas are heated through, about 3-4 minutes.
Next stir in scrambled eggs, cauliflower, soy sauce and oyster sauce. Cook stirring frequently for about 5-7 more minutes. You can continue adding in oyster sauce and soy sauce until you get a taste you like.
* Feel free to add in your favorite protein and veggies, just make it your own! You can add in tofu, chicken, chestnuts, cashews etc.
