Broccoli and Chicken Casserole
This is a meal I grew up with, my mom would make this quite often and it is so easy to make just using ingredients you usually have in the fridge.
First I washed and cut my broccoli and put a good layer on the bottom of my 9x13 pan.
Boil your chicken, slice or shred it and put a layer of chicken on top of the broccoli.
Mix together your cream of chicken soup, mayonnaise and lemon juice and spread on top of the chicken. My mom used to also mix in some curry powder to change up the taste a little and I LOVED having the curry in the sauce. Cook in the oven uncovered for 30 min. on 350°.
When the 30 min is up, add cheddar cheese on top and place back in the oven for 5 more minutes. In my house we always ate this on top of rice, you can eat it however you would like so just enjoy it!!
